I don’t know about you, but when the weather starts getting warmer and the Sun is out, I begin to eat super light. Light breakfast, lunches and dinners opposite to my Winter menu! 😉
During the week, I often make a variety of different salad options for both lunch and dinner. Over the weekend, I had the pleasure of taste testing what my friend had cooked for her family for Easter over the weekend.
The meal was perfectly planned from the starters to the dessert. She followed a recipe she found on The Food Network by Ina Garten. Ina Garden’s Balsamic Roasted Beet Salad found at (http://www.foodnetwork.com/recipes/ina-garten/balsamic-roasted-beet-salad-recipe) is incredibly delicious! This is something that would be great to serve at a dinner party or just to bring for lunch at work.
I world recommend to pair this salad with a couple of slices of fresh prosciutto on the side! 😉
