I love everything about Fall – Apple picking, Netflix binging, wearing sweaters, and staying in on weekends baking. Fall has always been my favourite season.
Since this weekend’s weather was super cozy and colder outside, I knew it was time to get out one of my mom’s favourite Fall recipes, Mini Pumpkin Loaves. I love making these and then freezing a couple for when company comes over. This is a very simple recipe to make that will be enjoyed by all! My favourite part about making these is how fabulous your house will smell after they are baked and fresh out of the oven!

Ingredients:
3 ½ cup flour
2 tsp. baking soda
1 ½ tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
3 cup sugar
1 cup oil
2/3 cup water
4 eggs
2 cup pumpkin (purée from can)
Flavour Options: I usually include 2 cups of chopped walnuts/raisins OR chocolate chips/walnuts. Either blend is super YUMMY!
Pumpkin Seeds – Topping option
I love the way the pumpkin seeds make the loaves look after they bake.
Directions:
Mix together all wet ingredients in a mixing bowl. Add all remaining ingredients and mix until smooth.
Flour and grease mini loaf pans and fill half full. Top Mini Loaves with a little bit of pumpkin seeds. Bake at 350 for 60-65 minutes. Cool 5 minutes.
