Any time I have company over and I want to serve something good, I reach into my freezer, take out this banana bread and warm it up! I always have about two loafs on hand ready to warm up. This recipe is super simple to make and will be a crowd pleaser. Sometimes I will also (when itβs warmed up) add one scoop of vanilla ice cream. Voila! The perfect accompaniment to a after dinner dessert. The key to this perfect, moist banana bread is one special ingredient – SOUR CREAM. The sour cream will make this banana bread so fluffy and not dry at all! I always hate biting into a piece of dry banana bread. There is nothing worse, so make sure you add the sour cream! π
Ingredients:
- 1β2 cup margarine or 1β2 cup butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1β2 cups flour
- 1 teaspoon baking soda
- 1β2 teaspoon salt
- 1 cup mashed banana
- 1β2 cup chopped nuts (omit if you don’t like nuts)
- 1β2 cup sour cream
Also Optional: Mini Chocolate Chips or 1 tsp of cocoa powder (for added flavour)
Topping: Powdered Sugar
Directions:
1. Grease 1 large loaf pan. I add flour to the bottom and sides of the pan
2. Mix margarine, sugar, eggs and vanilla
3. Add dry ingredients, then bananas, nuts and sour cream. If adding optional ingredients (such as chocolate chips or cocoa powder) add them during this time as well
4. Mix well
5. Bake at 350 F for 1 hour and make sure pan is a little cool before moving the banana bread out of the loaf pan. Add powdered sugar as a topping if desired as well.
